Carrot Cake

Carrot Cake

2 & 1/2 cup flour

2 cup sugar

2 tsp soda

4 whole eggs

2 tsp cinnamon

1 & 1/2 cup wesson oil

1 tsp salt

3 cup grated carrots

Sift together flour, soda, cinnamon and salt; add sugar, eggs, wesson oil, and grated carrots. Mix well; bake in 350 degree oven for 30-35 minutes.

Carrot cake filling:

1 box confectioners sugar

2 tsp vanilla

1 (8oz) package cream cheese

1 cup chopped nuts

1 stick margarine

Mix together 1 box powdered sugar, cream cheese, margarine, vanilla, and chopped nuts. Top on cake.
