Substitutions

1 tbsp cornstarch (for thickening) or 2 tbsp flour.

1 cup sifted cake flour or 1 cup minus 2 tbsp sifted all-purpose flour.

1 cup all-purpose flour or 1 cup self-rising flour minus the salt and baking powder from the recipe.

1 cup self-rising flour or 1 cup all-purpose flour plus pinch of salt and baking powder. (Most recipes call for all-purpose flour unless otherwise stated)

1 cup sour milk or 1 cup sweet milk into which 1 tbsp vinegar or lemon juice has been stirred.

1 square chocolate (1 ounce) or 3 or 4 tbsp cocoa plus 1/2 tbsp shortening.

1 cup sifted all-purpose flour or 1 cup plus 2 tbsp sifted cake flour.

1 cup sweet milk or 1 cup sour milk or buttermilk plus 1/2 tsp baking soda.

1 whole egg or 2 egg yolks for custards. 2 egg yolks plus 1 tbsp water in cookies etc.

1 cup molasses or 1 cup honey.

1 package active dry yeast or 1 cake compressed yeast.

1 tbsp prepared mustard or 1 tsp dry mustard.

1 cup whole milk or 1/2 cup evaporated milk and 1/2 cup water.

1 cup sour, heavy cream or 1/3 cup butter and 3/4 cup milk.

1 tbsp flour (for thickening) or 1/2 to 2/3 tbsp cornstarch.

1 cup honey or 3/4 cup brown sugar plus 1/4 cup liquid.

1 cup granulated sugar or 1 & 1/3 cup brown sugar or 1 & 1/2 cup powdered sugar

1 tsp baking powder or 1/4 tsp baking soda plus 1/2 tsp cream of tarter.
