1/4 cup chopped onion
1 tbsp margarine
In a 3 quart saucepan over medium heat, sauté onion in margarine for 2 minutes or until beginning to soften.
Add:
3 cups water
2 cups chopped iceberg lettuce
1/8 tsp pepper
3 chicken bouillon cubes
1 package frozen chopped broccoli (10oz)
Add these ingredients. Bring to a boil; reduce heat to low. Cover and simmer for 10 minutes or until broccoli is tender.
Place half at a time in a blender container. Cover and blend at high speed for 1 minute or until very smooth.
Makes eight half cup servings.
