Mexican Cornbread

Mexican Cornbread

1 & 3/4 cup yellow cornbread mix (such as jiffy)

Mix with sweet milk and egg

1/2 cup grated sharp cheddar cheese

2 tbsp grated parmesan cheese

2 tbsp chopped pimento (optional)

1/2 medium onion chopped fine

2 jalapeno peppers, washed, seeded, and chopped fine

Mix cornbread mix, milk and egg. Add rest of ingredients and mix thoroughly. Pour into well greased 8×8 inch baking pan. Bake in preheated 400 degree oven 20-25 minutes.
