Skillet Apple Pie

1 stick butter (I use half a stick sometimes—it’s still plenty!)
¾ cup brown sugar (I usually cut back on this amount, too—maybe half a cup)
1 package of pie crusts
3-5 cups of apples sliced thin (I don’t measure the apples; I just use about 5-7, depending on the size. I like to use Granny Smith apples but you can use any cooking apple you like! I’ve made the recipe with different varieties
1 cup of white sugar
2 tbsp of flour or 1 tbsp corn starch
Cinnamon to taste – I use quite a bit, usually 2 tsp—and sometimes add cloves or allspice

Melt butter in iron skillet with brown sugar until syrupy. Lay one pie crust on top. Mix apple slices with sugar, flour and spices and put on top of bottom crust. Add second crust over the top. Slit holes in the top and press edges down. Dot with butter and sprinkle with more cinnamon sugar (I usually skip this step). Bake at 350 degrees for 45 minutes or until golden brown. Be careful, this pie tens to bubble over in the oven—I put a pan underneath it.
