Salad:
1 large package lime gelatin
1 cup boiling water
1 (20oz) can undrained pineapple
1 cup lowfat cottage cheese
1/2 cup finely chopped celery
1 tbsp chopped canned red pimentos
1/2 cup chopped walnuts or pecans
Dissolve gelatin in boiling water. Cook until syrupy, then stir in remaining ingredients. Pour into a 9×13″ glass dish that has been rinsed in cold water and let set until firm.
Frosting (may be omitted):
3 oz package cream cheese
1 tbsp mayonnaise
1 tbsp lemon juice
Combine ingredients until smooth. Spread top of salad with mixture and chill. Makes 16 servings
