1 pound black beans
3 cloves garlic
1 bell pepper, chopped
1 onion, chopped
2/3 cup olive oil
2 bay leaves
Salt to taste
1 tbsp vinegar
Soak beans overnight. Wash. Place beans in other ingredients, except vinegar, in pot. Add 1 quart water. Boil for 1 hour. Turn heat down and simmer 4 hours. Add vinegar before serving. Remove bay leaves.
