Rice Chantilly

3 cup cooked rice

1 tsp salt

1 cup grated cheddar cheese, divided

1/2 cup sour cream

1 or 2 dashes ground red pepper

Combine rice, sour cream, salt, pepper, and 1/2 cup cheese. Spoon into buttered shallow 1 quart baking dish. Top with remaining cheese. Bake at 350 degrees for 20 minutes. Makes 4 servings.
