1 package pasta tubes

1 onion, chopped

3 tbsp olive oil

1 clove garlic, minced

1 pound Italian sausage

2 tbsp cream

1 tsp oregano

2 eggs

1 & 1/2 spinach cooked, drained and chopped or 2 (10oz) packages frozen spinach thawed and drained

Salt and pepper to taste

Saute onion in olive oil, add garlic and cook until soft. Remove to bowl. Add sausage to skillet, cook until well done. Add sausage to onion and garlic, then add cream, oregano, eggs, spinach, salt and pepper. Mix with spoon.

Cook pasta tubes and and stuff with mixture being careful not to tear.

In 13x9x2 baking dish line with tomato sauce (ragu is fine). Place filled tubes side by side, then cover with more tomato sauce. Bake in 375 degree preheated oven for 40 minutes or until sauce bubbles around the edges.
