Applesauce Oat Bran Muffins

3/4 cup diced dried fruit

2 & 1/4 cup oat bran

1 & 1/2 tsp baking powder

1/4 tsp salt

1 cup unsweetened applesauce

1/2 cup packed brown sugar

2 tbsp vegetable oil

1 & 1/2 tsp cinnamon

3/4 cup all purpose flour

3/4 tsp baking soda

2 egg whites

3/4 cup buttermilk or yogurt

Mix together oat bran, flour, baking powder, baking soda, salt and cinnamon in a mixing bowl. Whisk together egg whites, applesauce, sugar, buttermilk, oil and fruit. Add to dry ingredients and stir just to blend. Fill 12 greased or paper lined muffin cups, and bake at 375 degrees for 20 minutes. These muffins freeze well.
