Pina Colada Muffins

Pina Colada Muffins

1 (1 pound) box yellow cake mix

1 tsp coconut extract

1 tsp rum extract

1 cup flaked or shredded coconut

1 cup chopped walnuts

1 cup drained, crushed pineapple

Preheat oven to 350 degrees.

Using an electric mixer, prepare cake mix following package directions. Stir in remaining ingredients, being careful not to overmix batter.

Grease muffin tins or line with paper cups. Fill each cup 3/4 full. Bake in preheated oven for 15-20 minutes or until wooden toothpick inserted in the center of muffins comes out dry. Makes about 30 muffins.
