Southern Fried Chicken

2 to 2 & 1/2 pounds chicken (whole chicken cut up or the parts you like)

1/2 tsp black pepper

2 tsp salt

1 cup flour

Crisco

Wash chicken, pat dry. Salt each piece. Mix flour, remaining salt and pepper in a paper bag. Put a few pieces of chicken at a time into bag; shake until coated. Fry chicken in fat, in a deep heavy skillet. Brown on each side, cover and cook about 30 minutes, until golden brown. Remove and drain on paper towels.
