Base:
4-5 sweet potatoes or equivalent in canned sweet potatoes
3/4 stick of margarine, melted
1 egg
1/3 cup evaporated milk
3/4 cup sugar
1 tsp vanilla
Topping:
1 cup brown sugar
1/3 cup flour
1/3 cup melted margarine
1 cup chopped nuts
Boil potatoes until done. Peel. Cut 1/4 to 1/8 inch from potatoes to remove strings. Beat potatoes. Add 3/4 stick margarine until smooth. Add eggs, milk, vanilla and beat well. Put in greased 13×9″ dish.
Sift brown sugar to remove lumps. Mix flour and margarine. Stir in brown sugar. Pour over potatoes. Sprinkle nuts over mixture. Cook in 350 degree oven for 30 minutes.
