Rhubarb Crunch Pie

Mix until crumbly:

1 cup flour

1 tsp cinnamon

1/2 cup butter

1 cup brown sugar

3/4 cup uncooked oats

Press half mixture into greased 9″ baking pan. Cover with 4 cups chopped rhubarb.

Combine:

1 cup sugar

1 tsp vanilla

2 tbsp cornstarch

Cook until thick and clear. Pour over diced rhubarb. Top with remaining crumbs and bake 350 degrees for 1 hour.
